Starting a pizzeria: the hours chosen by pizzerias that are already open

To start your pizzeria, look first at what pizzerias that are already open do: among 1,534 pizzerias in 12 French départements (administrative areas) whose opening hours are recorded in OpenStreetMap, more than one in two opens for lunch and evening (54.6%), the evening service runs from 18:00 to 22:00 (median), Monday is the most common closing day (32.0%) and, on Friday at 19:45, 1,484 pizzerias out of 1,534 (96.7%) are open at the same time. Next, declare your hours in Pizza Planner Pro: your services for the week, day by day, and the baking capacity of each 15-minute slot.

A typical week, based on the opening hours of 1,534 pizzerias

Example week built from the median opening hours of 1,534 pizzerias in 12 French départements whose opening hours are recorded in OpenStreetMap (data as of 7 October 2026). It is not a recommendation: your hours depend on your location, your customers, your team and the rules that apply to you.

  • Lunch 11:30–14:00, evening 18:00–22:00: the median hours recorded.
  • Open 6 days out of 7, like the median pizzeria; yet 45.5% open 7 days out of 7.

This schedule is a starting point. In Pizza Planner Pro, you declare your own services — lunch, evening, closing days — and you change them when your rhythm changes.

The three choices to make before opening

Paris, Isère, Bouches-du-Rhône: what changes from one département to another

In Paris, a dense city (338 pizzerias recorded), 3.6% open in the evening only and 34.0% open all day without a break. In Isère (232 pizzerias), 38.8% open in the evening only; in Bouches-du-Rhône (166 pizzerias), 38.6% open in the evening only. Opening in the evening only is therefore not confined to one type of département: if your département is one of the ten published in our guide lunch and evening or evening only, its figures are there; otherwise, look at your street rather than at an average.

Where these figures come from

The opening hours recorded in OpenStreetMap were collected on 7 October 2026 for 1,534 businesses with ‘pizza’ cuisine, restaurants and takeaways combined, in 12 French départements. The shares are calculated on this sample; the hours are local times. These are displayed opening hours, not a measure of footfall.

Planning your production from the very first service

Once you have chosen your hours, you still need to know what comes out of the oven and when: the guide to the production schedule sets out the method, and the one on Friday night helps you get through that service.
