Starting a pizzeria

Which day should you close your pizzeria? Monday first, rarely Friday

Aurélien Denot

To work out which day to close your pizzeria, look at Monday first: it is the most common closing day, ahead of Sunday. Friday, on the other hand, is the day when pizzerias close least. And 45.5% do not close on any day. Figures: 1,534 pizzerias in 12 French départements (French administrative areas), OpenStreetMap, data as of 7 October 2026.

When you open a pizzeria, you often want to open every day. To make yourself known, so as not to miss a single customer. Then tiredness sets in, and the question comes back: which day should you close?

This guide shows you what pizzerias that are already open do, day by day. It does not choose for you. It gives you benchmarks so that you can decide with full knowledge of the facts.

Closing days, day by day

Here is the share of pizzerias closed on each day of the week:

Day Pizzerias closed that day
Monday 32.0%
Tuesday 9.7%
Wednesday 5.9%
Thursday 3.7%
Friday 2.6%
Saturday 8.5%
Sunday 28.9%

Two days stand out: Monday and Sunday. For the rest of the week, few pizzerias close. Friday is the day when the fewest pizzerias close.

Monday, the first closing day

Monday is the most common closing day: nearly one pizzeria in three (32.0%) is closed that day.

And among the 836 pizzerias that close at least one day a week, 58.7% close on Monday.

Opening hours do not say why. A manager may close on Monday to get their breath back after the weekend, or because Monday evening is quiet in their street. It is up to you to see whether these reasons hold for you.

Sunday, the second choice

On Sunday, 28.9% of pizzerias are closed.

Among those 836 pizzerias that close at least one day a week, 53.0% close on Sunday (the same pizzeria can close on both days).

On Sunday, a pizzeria in a residential neighbourhood may find families. A pizzeria in an office district may find it very quiet. Look at who lives around you.

Do not underestimate Friday

It is the day when pizzerias close least (2.6% closed, against 32.0% on Monday), and on Friday at 19:45, 1,484 pizzerias out of 1,534 (96.7%) are open at the same time.

These figures are about opening hours, not sales. They say one simple thing: closing on Friday evening means being one of the few pizzerias closed that evening.

On Friday at 19:45, more than nine pizzerias out of ten are open at the same time; in your kitchen, it is the oven that sets the limit. With Pizza Planner Pro, your customers order online and choose their pickup time; the order is recorded in your schedule and you confirm it, according to the capacity you have declared for each 15-minute slot.

To prepare for that evening, read our guide to getting through the Friday-night service.

Seven, six or five days: how many days should you open?

As a median, a pizzeria opens 6 days a week.

In detail, 45.5% open 7 days a week, 28.8% open 6 days, and 20.3% open 5 days.

Source: OpenStreetMap (ODbL), data as of 7 October 2026, 1,534 pizzerias in 12 French départements. See the full source.

These three shares do not cover all pizzerias: the others open fewer than 5 days.

An honest clarification: opening hours do not say which day the pizzerias that open 6 days close. We know that Monday is the most common closing day, but not whether it is the closing day of every pizzeria open 6 days.

Choosing your closing day

There is no right day for everyone. Here are the questions to ask yourself before deciding.

When do your customers come? At the weekend, during the week, at lunchtime, in the evening? The quietest day in your street is a good candidate for closing.

When does your team rest? When you start, you will work a lot. A fixed day off, known to everyone, helps you last over time.

When are you delivered to? If your flour or cheese supplier comes on a particular day, closing that day can make taking deliveries complicated.

How many services a day? Closing one day does not weigh the same if you open for lunch and evening or for the evening only. Read our guide lunch and evening, or evening only.

A closed day also changes your preparation. The day before, you prepare less dough; the day after, you start again from scratch. To adjust your quantities day by day, read our guide to calculating your dough balls per service.

And for the opening hours on the days you open, read our guide to pizzeria opening hours.

How to read these figures

These figures are a Pizza Planner Pro analysis of OpenStreetMap data, the collaborative map of the world. We counted the pizzerias whose opening hours appear in OpenStreetMap, in 12 French départements: Paris, Rhône et Métropole de Lyon, Isère, Bouches-du-Rhône, Gironde, Haute-Savoie, Savoie, Puy-de-Dôme, Loire, Ain, Allier and Haute-Loire. That makes 1,534 pizzerias, recorded on 7 October 2026.

What you need to know to read them correctly:

  • These are posted opening hours, not a measure of the number of customers or of sales.
  • This is not the whole of France. Only the pizzerias of these 12 départements whose opening hours are filled in are counted.
  • It is a snapshot at a given date. The figures do not say how the same pizzeria changes its opening hours over the years.
